Geoff created a very nice wiki page detailing how to add a security https://wiki.gnucash.org/wiki/Stocks/add_stock.
Note that the parent account for a security account cannot be a security account. It would normally be an asset account. Usually you choose the asset account that represents your brokerage account or a sub account of that account if you want more detail. The Tutorial shows several asset sub accounts under the brokerage account with the stocks and other commodities distributed under those but you aren't required to have that extra layer.. I put my security accounts directly under the asset account that represents my brokerage account. You do need to choose the parent account first before choosing the security when setting up the security account.
