That is a non-sequitur argument.  Most institutions are likely using payment processors and accounting in native currency to begin with, and institutions using actual crypto would still follow their accountant's advice likely tracking it as an asset which is already possible. Beyond the fallacy, I'm not sure why you seem to think it should matter to users or developers here whether said institutions use this free open source software anyway.
