Welcome to the GnuCash user list. You can limit what information GnuCash overwrites by choosing the Update option while in the matching phase of a OFX or QIF import. For each transaction note what GnuCash will overwrite, which may be the notes that you want to keep, the amount or the date. If it is the notes, then choose to either make the imported transaction 'New" if it contains data necessary for correct reconciliation, or do not import it. Then later you must remember to manually fix the issue that you could not fix during the import process, a lot of work, I know. Set up a routine that makes it easier to remember everything.
I will warn you against trying to edit the existing transactions during the import process, because it is possible to accidentally place the curser in an incoming transaction which can make quite a mess while trying to extricate it.
