Regarding the column labels, there are some options in various places. One is under Edit > Preferences > Accounts, but there are also some others scattered around that change depending on whether you are using single line or two line view and Basic Ledger, Auto-Split Ledger or Transaction Journal view, for example. One notable point for converts from Quicken is that GnuCash calls incomes and expenses accounts instead of categories, and all transactions have transfers to and from other accounts in double entry bookkeeping. As for the online setup, that may or may not work with your financial institutions, I didn't get it to work with any of mine so I do a manual export from the online presence and manually import the data into GnuCash. I can use the QFX/OFX format with most of my banks. You can ask specific questions here about setup with specific institutions.
