I'm a bit surprised that 2.6 handles this correctly. The setting of concern is in Preference di Sistema>Dock. Change the setting for Apri nuovo document come panello to one of the other choices besides Sempre--either Solo in modalità a tuto schermo or manualmente and restart GnuCash.
