Jim, By the look of it you may not entering a general name for your set of books when you first open the file. The format of the main file should be "<filename>.gnucash" where <filename> is a name you enter when you first save the file after you have created a new file/set of books.
It is not really clear in the most recent GTK dialogs, that you have to enter a filename in the box labelled Name in the Save dialog as the prompt does not come up in that box by default to encourage you to enter the filename and it is fairly easy just to hit the Save button without doing so. If this is the case and you do not want to recreate the files, it is likely you will have a file named .gnucash. You may not be able to see it if you are using the file explorer ( usually nemo or nautilus but will depend on your Linux distribution) as files starting with a "." are usually hidden by default. If you type Ctrl-h in the main pane of your file explorer, you will enable seeing the hidden files in the directory. You should find a file named ".gnucash". In a shell the "ls -al" command should list all files including hidden files. You should then find the file structures listed in the reference Liz gave you. If you have a file ".gncash" rename it to <filename>.gnucash where filename is a descriptive name for your books and similarly for the related backup and log files described in the above reference. It is generally a good idea to put the gnucash data files for a single set of accounts in their own directory as it simplifies any file maintenance operations.
