Joe, I've been using GnuCash on Linux Mint for approx 5 years with no problems. The Software manager version is sometimes a little behind the current GnuCash version but at present it has a flatpak GnuCash V3.2 available that worked fine under LM18.3 and is working fine on LM19. I'm currently running Linux Mint 19 (Tara) and previously used the LM17 and 18 versions. I have also built GnuCash from source on Linux Mint for the last couple of years and I like to stay up to date (also kid myself I might get involved in development in a minor way when I get bored with being retired).
