You need to double-click on the app. Also there have been reports that Gatekeeper isn’t passing GnuCash on to LaunchServices after verification so a second double-click is needed to actually launch it.
If that still doesn’t work try opening /Applications/Utilities/Terminal and starting GnuCash from the command line as follows: /Applications/Gnucash.app/Contents/MacOS/Gnucash If it fails there may be some output there indicating what’s gone wrong.
