Tell us which version of gnucash you are using and what operating system you are using.
Open gnucash, accept any warnings or errors that appear as it tries to re-load the last accounts file used then use File > Open to browse to where your accounts file is (it will be wherever you last saved it or wherever you have restored it to from your backup, and will probably be called accounts.gnucash or something similar, depending on what you named it when you first saved it). As a general principle it is best not to bin things until you have checked that you can access the data from your backup, just in case you have not been backing up what you think you have, but it seems it may be too late for that advice.
