Did you not get a Mac crash report when it disappeared? Check Console.app usually under User Reports.
You could try running from the command line to see if there are any errors reported: Open Terminal.app (from launchpad or using spotlight) Type the following: /Applications/Gnucash.app/Contents/MacOS/Gnucash Hit [ENTER] Report back anything that looks like an error, especially just prior to the crash and the command prompt returning.
