Lacking libpng, liftiff, and gtk-doc means that meta-gtk-osx-bootstrap didn't get built. I've added that to the module arrays in .jhbuild-custom so that it will. As for gettext, Apple doesn't distribute gettext so it shouldn't be in /usr/bin. You should delete it and anything else in /usr/bin or /usr/lib that didn't come from Apple.
