I do have gnome-icon-theme 2.12.0 installed.
This is a gtk issue, not a gnucash issue. I saw the same error
message
posted to the gtk lists yesterday. The solution is to install the
hicolor icon theme. I don't know whether this is alread in fink or if
you need to pull it from
http://freedesktop.org/wiki/Software_2ficon_2dtheme.
The fink based solution is to install "default-icon-theme". Since
this package was in my fink incarnations for earlier OS X versions,
it does look like a gtk2+ dependency oops in fink.
