Yes, though you should tell your friend, that when he exports from Quicken, he
should export all the accounts together!! He should be able to do this by
selecting all the accounts from the export window in quicken.

When he has finished importing all the accounts into Gnucash, he can then
modify the 'categories' to what he feels is appropriate.

It would help to read up on basic double entry principles. There is a good
write up (Gnucash specific) under Documentation on the GnuCash web site.
