ctrl + click on a favourite app icon will open a new instance. Never tried the extension put "Dash Click Fix" changes this to always open a new instance when an icon is clicked: https://extensions.gnome.org/extension/67/dash-click-fix/ If an app is running, the favourite icon is highlighted (underlined), but this checks all workspaces not only the current. @Tassilo For Terminals I use tabs to "organize" my consoles, which is supported by nearly all "console apps".
