So, although GUADEC is obviously an event where we plan to focus on GNOME development specifically, I personally can't see it being a big deal breaker that an attendee might use compiz and MATE rather than GNOME Shell. Whilst I can't speak for the whole team on this, personally I would echo Oliver's vibe and urge you to feel free to get involved. The more people interested in contributing to our accessibility efforts, the merrier really.
