Hi It might be done in 1 step. you need to take a couple of hops. 7.1 to 7.4 to 7.6 to 8.0. Database migrations might fail if u do it directly in one step from 7.1 to 8.5. If ur using RPM, plz follow above steps which i have done. You can also see simillar post in https://forum.gitlab.com
