It depends what you mean by "learn how to use it". GIMP is just a tool, what you can do with it depends on your creativity and skill as well. In other words, do you want to know "Where can I define a layer mask?" or do you want to know "What is a layer mask and why would I want to use one?" If the latter, then you don't necessarily need a GIMP tutorial as much as basics of digital image manipulation which would apply to almost any similar programs. Also, one option for dealing with tutorials that assume you're using an old version is to use an old version.
