Not sure I understand - is it like you want to cut off someone's nose with the straight line being where their nose used to be attached? I'd use the free hand (lasso) tool to select the part of the image you want - so you have a rough outline of the nose (plus some cheek), then select the rectangle select tool and hold CTRL (to subtract the selection) along the straight edge. There is probably a better way to do this, but the above is my first guess at a way. Also, if you straight selection is not vertical or horizontal, I suppose you could rotate the image/layer first, then rotate it back.
