There are several panorama plugins for gimp, listed here:

With Gimp 2.0, it seems you can either use
phfluuh: http://www.acc.umu.se/~janlert/phfluuh/
or
pandora: http://www.shallowsky.com/software/pandora/

However, you are not obliged to use gimp for this. Hugin seems to have a nice interface that will probably make it easier than the plugins:
