Look at the ImageMosaic plugin for raster time-series data at:

http://docs.geoserver.org/latest/en/user/tutorials/imagemosaic_timeseries/imagemosaic_timeseries.html

You will end up enabling the time parameter when you publish your layer,
and will then include the parameter in your WMS (or other) request for data
by your client.
