1) Hmmm, not sure. I think it depends on what your gridset is - you need to
create one of them in 3857. -

then Geoserver should probably reproject automagically when it creates the
tiles.
2) You don't need to pre-seed. GeoServer will automatically create tiles
when necessary if they're not in the cache already. Pre-seeding is useful
for when you go live of course.
