Jon, in case you are working with Python to further process your WCS 1.1.1 MIME multipart/mixed response, there is OWSLib ( http://trac.gispython.org/lab/wiki/OwsLib) including a WCS decoder. I am not sure how active this project still is, but I found it inspiring to write my own little WCS decoder.
