Switched to Maven 2.1 on Trunk (Maven 3 doesn't compile the extensions), ran
this:

mvn install -D skipTests -P allExtensions

then

mvn eclipse:eclipse -P allExtensions

Then imported into Eclipse as per the instructions in the quickstart.

Then ran (as Java Application)  the Start.java that is in: web-app |
src/test/java | org.geoserver.web | Start.java in the Package Explorer.

Runs fine, but the extensions don't appear. I'm particularly looking for the
WPS service.

What step am I missing?
