Hi Simone, Thanks for your response. Our first approach with WPS will consist in making unions, intersections, differences and buffers, but it could be possible that in the future (in a year more or less) we'll be requested new functions.

As per the other products, I do not know what to say since we (as in GeoSolutions) tend to use GeoServer WPS when it is needed. I guess it all boils down to what you need to do with WPS.
