Some more info to add to the problem: I created a soft link to a JP2k directory and created the imagemosaic layer in the second Geoserver instance, so that there were two shapefiles inside the JP2k directory. ie directory utm12/utm12.shp, softlink utm12_test/utm12_test.shp
When I tried to preview the layers in OpenLayers both render data. Therefore I am guessing that there is a now a problem with 2+ geoservers sharing a common shapefile. I have had concurrency issues with GWC, so ended up removing it from my distro and now runs smoothly. Test removing all *gwc*.jar files from the WEB-INF/lib folder and give it a go.
