OpenLayers has a transition effect for this. Unfortunately, afaik you
cannot configure this effect in the built-in preview, but I think a patch
would be fairly easy to put together.

OpenLayers example with transition effects:
http://openlayers.org/dev/examples/transition.html
The GeoServer template used to generate the OL previews:
http://svn.codehaus.org/geoserver/trunk/src/wms/src/main/resources/org/geoserver/wms/map/OpenLayersMapTemplate.ftl

If you aren't comfortable building the entire project from maven, you should
be able to unzip the wms-*.jar file and edit the template within. You'll
have to restart geoserver to reload the template though.

Hope this helps.
