I tend to sync my one gentoo machine every day or two, because I like to stay up to date and play with the newest toys :). I have however paid for this enjoyment in the form of hours fixing my machine, serveral times! If you are aiming for as stable a machine as possible I would only update what you need to update, or specific packages you want to update or add.
