As author of the projectxml I can say that extension is not trivial (projectxml is somewhat an extension of guidexml). The main problem is that the documents must remain compliant to the DTD of the format. Extending as such is nontrivial. The way projectxml does it is accepting all the relevant guidexml tags, just copy those over and then run the guidexml stylesheet over the result (which then also includes the project specific stuff).
