Hi Dark, I'll try to answer at least a few of your questions here.
As far as I know, the background music doesn't change at all, it just gets faster and stays at the fastest level when you play long enough.
I really can't remember now what the differences between the free and paid versions are, I have the paid version for quite some time now. It could be that just advertisements get removed.
Regarding the gestures, the swipe is just a swipe with one finger. And the pinch is a lot more difficult here than in "Smack me" if you ask me. I myself lose quite often when pinching comes up. The main thing is that you have to be really quick on doing it, even when the game speed is still slow at the beginning. And make sure that both fingers with wich you perform the gesture touch the screen properly. That's all I can tell you really.
