In the hopes of seeing more accessible game podcasts, I will answer 
this question, as I fele it may be on topic for accessible game 
reviews and chats.

Setting your sound card recording input to "Stereo Mix" or "What You 
Hear" will allow you to record Skype conversations with most 
commercial audio editing/recording packages.  For higher quality, 
many podcasts are recorded on an external device, such as digital 
recorders.  "This Week In Tech" is a highly popular one that is done 
in this way, and is the prefered method.
