Setting your sound card recording input to "Stereo Mix" or "What You Hear" will allow you to record Skype conversations with most commercial audio editing/recording packages. For higher quality, many podcasts are recorded on an external device, such as digital recorders. "This Week In Tech" is a highly popular one that is done in this way, and is the prefered method.
