I grew up partially on the AZ/MX border where the restaurants (on the MX side) had avocados year around (on the US side, they were very seasonal) and the standard was to prepare it right at the table as done at Gabriel's today. Of course, the economics were completely different, I vaguely remember the going price (mid seventies) being 10 pesos ($.80 US) for a Molcajete with 2 avocados.

I think the results were every bit as good as Gabriel's but somehow spending $12US for 1.5 avocados makes it ever so much more desirable? I suspect margaritas were also roughly $1US as well...
