You can modify the keyword section of the /usr/local/etc/rc.d/mysql-server(.sh) and add "nostart" This allows you to start it manually with /usr/local/etc/rc.d/mysql-server start, but it will not start at boot time as rcorder skips files with the nostart keyword.
