That said, you could put a site "on the air" without a secondary,
but I wouldn't charge people to use it.  ;-)

Would it be possible to have only one DNS server to start with and then get a second one later, on a different subnet ?

Or would this be possible: put this first dns server up and second aswell,
but then later take the second one off and move it to a different network ?

Both are possible. you just need to keep the configs in sync (the master knowing where the secondary is and vice versa) and update the listed nameservers at Godaddy.
