k, I had to create the /var/log/cups directory, now it seems to be logging OK.
I've turned up logging to debug level 2, as you suggest, and it looks greek
to me. I'm still getting the following error in the web interface when I try
to print;
Error:
client-error-not-possible
Any ideas?

First of all, verify that you've got both cups-base, cups-lpr and
cups-pstoraster installed on your system. Do a pkg_info | grep cups to
do this. If all these three packages are installed, please provide the
last, say, 10 lines of your /var/log/cups/error.log.
