Plain "proto=udp" works for me.  Here's my mapfile:

*               host==${key};type:=link;fs:=/ \
                hostd==${key};type:=link;fs:=/ \
                
type:=host;fs:=${autodir}/${rhost};rhost:=${key};opts:=rw,intr,soft,proto=udp,grpid

localhost       type:=link;fs:=/
