That's quite simple: Use LaTeX. Really, it solves all your problems. You can easily code Umlauts and Eszett in a smart way: \usepackage{german} and then: Der L"owe fri"st M"usli. Und "Ol mag er auch. LaTeX also pays attention to placing the ligatures properly. You can easily create PDF output (for sending text to others), as well as easy printing (PS output).
