I realize that such hacking would be quite substantial but maybe if I forgot about audio and all that, just how much work would it be? Could it be done?

Do not forget that all the things which make a Mac a Mac are still closed source. It is more like Linux. Linux alone is pretty useless without GNU, X and so on.
