Hmm, interesting - if you don't mind sharing I'd be interested in a copy of /.zfs/snapshot/2021-04-*-01:40:48-0/bin/sh, in order to track down what appears to be a diffoscope issue. To investigate the non-reproducibility though we can just manually run through the same sort of process that Diffoscope uses.
