boot environment selection menu

Here's a simple one for someone!

When you interrupt the boot process and select option 8 ("Boot Environements")
from the boot loader menu, you enter a submenu that allows you to select prior
boot environments (option 2).

The active BE is shown in green. When you press "2" to cycle through all
available BEs, the non-active BEs are shown in a dark blue (see attached
screenshot). I've yet to find an environment where I can read this dark blue on
black text.

It would be nice to see this changed to a more readable color - basically
anything light that would not blend into the background.

As to why this is important, I suspect that when you really *need* to revert to
an older BE, you're likely in a bit of trouble - something, perhaps in
production, is not booting or having some type of issue. It's imperative that a
flustered sysadmin is able to see what's on screen without having to google how
to turn color off - time is of the essence and interrupting the troubleshooting
flow with having to research why the menu is unreadable is not optimal.
