That sounds like the boot blocks weren't written.
Can you try installing the boot block on all devices e.g.
gpart bootcode -b /boot/pmbr -p /boot/gptzfsboot -i 1 da0
gpart bootcode -b /boot/pmbr -p /boot/gptzfsboot -i 1 da1
