But I was looking for some right use of ETC_MAILNAME variable in config
files, and have a solid work of configuration in Debian.

I use this on debian to make sure the helo is set the way I want it:
In file /etc/exim4/exim4.conf.localmacros add:
MAIN_HARDCODE_PRIMARY_HOSTNAME = mx.example.com
Replace mx.example.com with whatever you need.
