You cannot do either without a macro.
 You have to have at least one sheet visible.
To hide or unhide all sheets you can use:
 
For sht = 2 to sheets.count
  sheets(sht).visible = false '(or true)
next sht
 
To sort sheets, I would first load the sheet names into an array,
sort the array,
then turn off screen updating before moving the sheets.
 
like:

Sub Sort_Sheets()
    Dim ShtArray, inx
    Dim SortFlag, tSheet
    ReDim ShtArray(Sheets.Count)
    For inx = 1 To Sheets.Count
        ShtArray(inx) = Sheets(inx).Name
    Next inx
    SortFlag = True
    While SortFlag
        SortFlag = False
        For inx = 2 To UBound(ShtArray)
            If ShtArray(inx) < ShtArray(inx - 1) Then
                SortFlag = True
                tSheet = ShtArray(inx)
                ShtArray(inx) = ShtArray(inx - 1)
                ShtArray(inx - 1) = tSheet
                Exit For
            End If
        Next inx
    Wend
    Application.ScreenUpdating = False
    For inx = 1 To UBound(ShtArray)
        Sheets(ShtArray(inx)).Move After:=Sheets(Sheets.Count)
    Next inx
    Application.ScreenUpdating = True
    MsgBox "Sorted"
End Sub

If you want the sheets to automatically sort when they're CREATED, then you 
can create a NewSheet event macro:
 
Private Sub Workbook_NewSheet(ByVal Sh As Object)
    ActiveSheet.Name = InputBox("Enter Sheet Name", "New Sheet")
    Sort_Sheets
End Sub
