The drop downs in the spreadsheet have been made using 'Data Validation'. In Excel 2007 this can be found under the ribbon 'Data' - click on Data Validation' - choose "list" from the options under Allow. The source section will contain your metadata, ie the data which you wish to view from the drop-down options. If I am not clear then let me know and I can breakdown the explanation.
