This topic has been discussed extensively in the past on the old Bugzilla, see
Bug 568311 [1] for details.

However the last comment in that discussion seems to indicate that the requested
feature had been implemented in a development release:

So I've been wrapping my head around trying to find the right option from the
settings window in Evolution 3.42.3 but I couldn't find any. I'd really
appreciate having a way of making my messages define a font without manually
selecting it every time.

Being a software developer myself I've even started hacking `e-msg-composer.c`
to make it include a simple stylesheet in all my messages, but this seems a bit
odd.

So before I continue to make a dirty local build of Evolution I thought I'd ask
what happened to this feature. Has it just not made it into production or is
there another way to achieve what had been requested in #568311?
