Hi,
eventually if you setup a new account in Evolution, pointing to the new
server, then you can copy the existing messages from the old account to
the new account directly in Evolution.
You should make copies of the data on the disk before you start, at
places which the above page references, especially the "Disposable data
caches", because there are stored the mails downloaded from remote
accounts, like from IMAP, and these can be wiped out (anytime), if not
marked for offline use.
