Hi, there is no way in the GUI. It used to be possible in the past, but it had been removed years ago. You can do it yourself by editing the corresponding file in ~/.config/evolution/sources/, where you replace BackendName=sendmail with BackendName=smtp in the corresponding .source file in the [Mail Transport] section. A restart of evolution-source-registry might be needed to get the changes into effect, ideally change the file when it's not running, but it's not always possible from a desktop environment. At least the version of Evolution from the Help->About menu will be better, eventually package versions of all evolution* packages.
