I went ahead and built evolution-data-server-3.30.4 and evolution-3.30.4 from 
source. 
It took awhile loading all the -dev packages and I ran into a couple problems 
which required 
me to configure finally with:

cmake -G "Unix Makefiles" -DWITH_OPENLDAP=OFF -DWITH_LIBDB=OFF
cmake -G "Unix Makefiles" -DENABLE_YTNEF=OFF

I hope turning these problem children off isn't going to cause me problems down 
the line. 
In any event, once I got these installed I have 3.30.4 up and running. And I 
can copy/save 
the two little inline images I sent earlier without issues. 

But when I went and tried my original problem email it failed again the same 
way. Looking 
closer this time (facepalm) I realized that it was loading an external link as 
an inline image.
I had even told it that it could. 

Now, in Thunderbird I could copy that image at this point. But I can see why 
it's a different 
animal. Probably no way to copy/save such an embedded image in Evolution?
