Like are there any error messages? If you run Evolution from the command line what does it say when it crashes.
If the crashing is reproducable then make sure you have the debug packages installed for your version of Evolution and then run it under gdb - when it crashes enter 'thread apply all bt' to get a backtrace and then open a bug in bugzilla and include the backtrace. Make sure you remove any sensitive information from the backtrace before submitting it.
