I did some test:
1: Type simple mail with PDF attachment mailed to myself.
2: hit [Send]
3: Email received.
Do step 1 to 3 several times.
The results are different.
First mail at 08:13: Everything OK, PDF is
attached and attachment shows up.
Second mail at 08:14: Mail arrives but literally
everything is lost (header, text, attachment)
Third mail at 08:24: Again everything is OK
Fourth mail at 08:25: PDF and mail text are lost.
Fifth mail at 08:25: PDF, title and mail text are
lost.
When writing text and PDF are lost, they are lost.
- In inbox listing email has: no attachment .
- Opening the mail to read it shows that the text is replaced by a
single
line of garbage characters.
- Move the mail to a local folder and then open the evolution mail file
shows the same as the email listing.
When there is an attachement it shows the PDF encoded text
(lines
of "garbage").
When there is no attachment the file contents shows no PDF block
of characters.
As you write, it clearly has to do with timing and with the size of the PDF file
as attachment.
Smal PDFs are lost more frequently than large PDFs, one must be faster
than the other (timing).
I reduced the amount of connections (from 5 to 2) to the server and that seems
to
do the job.
Clearing the cache is not really an option.

Well, it's not really garbage - it's the content type separator.
Gmail is strange though in lots of the ways it does things - it's IMAP
implementation is a kludge on top of how Google thinks mail should be
handled. What it looks like is that there is some timing issues between
Gmail processing the mail and Evolution attempting to retrieve it.
A few things you can try:
Have a look at the source of the message and see if the MIME structure
is correct - see if the encoded PDF attachment is present or not.
Try reducing the number of concurrent connections in the account setup.
If it is because Evo is retrieving things too quickly, then it might
help to delete the cache and get it to download the mail again. (Stop
Evolution and it's mail subprocesses and then remove the directory
~/.cache/evolution/mail - when Evolution is restarted it will recreate
the directory and re-populate the cache, if you have lots of subfolders
or a slow connection, it will take a while.)
