Oops, I missed this in the previous email. The backup/restore built in the Evolution is very simple and it is done by a separate binary, which takes some arguments. The binary is evolution-backup, located in /usr/libexec/evolution/ in my Fedora. Evolution calls it as: /usr/libexec/evolution/evolution-backup --gui --backup $FILENAME It closes the evolution before the backup is run, thus be careful. Also use --help to get more information about the possible arguments. In any case, as was said in this thread, the backup/restore is meant to be used rather for movements of the data between computers, or to have a backup before update, it's not meant to be used for regular backups. There are better applications for it.
